A summer drink with lime and mint, revived during the US Prohibition at the Bodeguita del Medio Bar in Cuba.

Ingredients

2 1/2 measures White rum
2/3 measure Sugar syrup
A small handful of Mint
Half a lime Lime juice
a dash Angostura bitters
2 measures Soda water
Crushed Ice

Method

Gently bruise the mint at the bottom of the glass, add the spent lime, fill the glass with crushed ice. Shake the rum, lime juice, Angostura bitters and syrup then strain into a glass, topping off with soda.

Serve with a garnish of mint and two straws.
